Artichoke Snack
- 2 jars (6 oz.) artichoke hearts
- 1 small minced onion
- 1 clove minced garlic
- 4 eggs
- 1/4 cup dry bread crumbs
- 1/4 t salt
- 1/8 t pepper, oregano, tabasco sauce
- 1 T parsley
- 1/4 lb. grated cheddar cheese (2 cups)
Sauté onion and garlic in juice from one jar of artichoke hearts.
Chop artichoke hearts into small pieces.
Beat eggs and add all other ingredients.
Spread in buttered 8" or 9" pan. Bake 30 min. at 350 degrees.
If chilled, reheat before serving (10-12 min at 325 degrees or a few minutes in microwave).
