Best Casserole
INGREDIENTS
- 1½ cups crushed tortilla chips
- 1 lb cut up cooked chicken1 can drained kidney beans (I used black beans instead)
- 1 can corn kernels
- 1 can (8 oz) tomato sauce
- 1 cup salsa
- 1 cup chopped red onion1 green pepper, diced
- ¼ cup chopped cilantro
- 1 T minced garlicsalt & pepper, to taste
- 6 oz grated Monterey Jack cheese
- 6 oz grated sharp cheddar cheese
Grease a baking dish and scatter crushed chips evenly on bottom.
Combine chicken, beans, corn, tomato sauce, salsa, onion, pepper, cilantro, garlic, salt and pepper in a bowl.
Put half in baking dish.Combine cheese and sprinkle half over mixture.
Add remaining chicken/bean mixture and sprinkle remaining cheese on top.
Bake for 30 minutes.
Let stand for 5 minutes before serving.
