Cheesecake
Oven at 350°- 1 ¾ cups of graham cracker crumbs
- 1/3 cup of butter, melted
- ¼ cup sugar
Mix together and press in the bottom of a 9” springform pan. Set aside.
- 3 8-oz. packages of cream cheese, softened
- 1 cup of sugar
- 1 cup of sour cream
- 2 tsp vanilla
- 3 eggs
Beat cream cheese and sugar until well blended. Add sour cream and vanilla and mix well. Add eggs one at a time beating after each until well blended. Pour into prepared crust.
Bake for 1 hour and 10 minutes until center is almost set. Turn oven off. Open oven door slightly and let cheesecake sit in oven for 1 hour. Remove from oven and cool completely.
Topping:- 1 cup crushed strawberries
- 1 cup sugar
- 3 T cornstarch
- 1/3 cup water
Mix sugar and cornstarch together in a sauce pan. Add the water and the strawberries. Cook over medium heat until the mixture comes to a boil. Remove from heat.
When cheesecake is completely cooled and strawberries have cooled, spread over cheesecake and refrigerate for at least 4 hours.
