Wild Rice and Chicken

  • 1 cup wild rice, cooked
  • 3 cups 1 bell pepper, diced
  • 1 cup celery, diced
  • 1 bermuda onion, diced
  • 2 lb cooked chicken breast, bite size (or 2 lb shrimp, or 1/2 shrimp and 1/2 lobster)
  • 1 lg can B&B mushrooms, sliced, drained  (or 1/2 lb fresh)
  • 1 can water chestnuts, sliced
  • 1 t. curry powder
  • 1 t. worcestershire sauce
  • 1 1/2 cups mayonaise
  • dash cayenne
  • salt and pepper

Mix together last 5 ingredients, then mix with all other ingredients.

Put into a large casserole and bake @ 350 for 45 minutes (or less).

Cover so it does not dry out.  Serves 8.
