Wild Rice and Chicken
- 1 cup wild rice, cooked
- 3 cups 1 bell pepper, diced
- 1 cup celery, diced
- 1 bermuda onion, diced
- 2 lb cooked chicken breast, bite size (or 2 lb shrimp, or 1/2 shrimp and 1/2 lobster)
- 1 lg can B&B mushrooms, sliced, drained (or 1/2 lb fresh)
- 1 can water chestnuts, sliced
- 1 t. curry powder
- 1 t. worcestershire sauce
- 1 1/2 cups mayonaise
- dash cayenne
- salt and pepper
Mix together last 5 ingredients, then mix with all other ingredients.
Put into a large casserole and bake @ 350 for 45 minutes (or less).
Cover so it does not dry out. Serves 8.
